    &lt;p&gt;La &lt;strong&gt;scamerita&lt;/strong&gt;, è una parte tenera e molto saporita del &lt;strong&gt;maiale. &lt;/strong&gt;Chiamata anche &lt;strong&gt;coppa&lt;/strong&gt; o &lt;strong&gt;capocollo&lt;/strong&gt;, è la parte del &lt;strong&gt;maiale&lt;/strong&gt; che si trova all&#039;altezza dell&#039;ultima vertebra, tra la testa e le spalle.&lt;/p&gt; 
&lt;p&gt;La &lt;strong&gt;scamerita&lt;/strong&gt; e&#039; una parte&lt;strong&gt; saporita&lt;/strong&gt; ma tenera, con un grado di&lt;strong&gt; grasso bilanciato&lt;/strong&gt; che dunque ci aiuta a dare corpo a qualsiasi &lt;strong&gt;ricetta.&lt;/strong&gt;&lt;/p&gt; 
&lt;p&gt;In Toscana e in altre regioni in cui la &lt;strong&gt;carne &lt;/strong&gt;è la regina della tavola, la &lt;strong&gt;scamerita&lt;/strong&gt; si &lt;strong&gt;cucina&lt;/strong&gt; sia d&#039;inverno che d&#039;estate, accompagnata da &lt;strong&gt;verdure&lt;/strong&gt; o stufata con i &lt;strong&gt;fagioli.&lt;/strong&gt;&lt;/p&gt;

&lt;p&gt;Quando l&#039;estate comincia ad allontanarsi, ci torna la voglia di &lt;strong&gt;cucinare &lt;/strong&gt;qualche&lt;strong&gt; piatto&lt;/strong&gt; un po&#039; piu&#039; elaborato. Senza complicarci la vita, possiamo preparare un &lt;strong&gt;secondo sfizioso&lt;/strong&gt; mettendo insieme&lt;strong&gt; carni&lt;/strong&gt; diverse e aggiungendo un condimento &lt;strong&gt;agrodolce.&lt;/strong&gt; &lt;/p&gt;

    &lt;p&gt;Un &lt;strong&gt;arrosto&lt;/strong&gt; si prepara velocemente e ci dà grande soddisfazione &lt;strong&gt;a tavola.&lt;/strong&gt; Si può cuocere anche in &lt;strong&gt;pentola&lt;/strong&gt;, ma io preferisco sempre il &lt;strong&gt;forno&lt;/strong&gt;, perchè il calore si distribuisce meglio e io posso fare altre cose mentre &lt;strong&gt;la carne&lt;/strong&gt; si cuoce.&lt;/p&gt; 
&lt;p&gt;L&#039;&lt;strong&gt;arrosto&lt;/strong&gt;, in generale, non deve stra-cuocere&lt;strong&gt; &lt;/strong&gt;ed è importante che &lt;strong&gt;la carne&lt;/strong&gt; faccia subito la crosticina esterna per poi cuocere piu&#039; lentamente all&#039;interno. Questo assicura che la carne non perda &lt;strong&gt;il sapore&lt;/strong&gt; e anche i nutrienti che invece restano ben protetti nel centro. Dunque per ottenere un &lt;strong&gt;ottimo arrosto&lt;/strong&gt;, prima di infornare, passate velocemente e a fiamma alta il &lt;strong&gt;pezzo di carne in padella&lt;/strong&gt; o in una pentola, su tutti i lati.&lt;/p&gt;
