    &lt;p&gt;&lt;strong&gt;Carnevale&lt;/strong&gt; è una festa golosa che in ogni regione viene celebrata con qualche &lt;strong&gt;ricetta tipica.&lt;/strong&gt;&lt;/p&gt; 
&lt;p&gt;In Val d&#039;Aosta si preparano questi &lt;strong&gt;dolcetti&lt;/strong&gt; con la marmellata. Veramente facili golosi.&lt;/p&gt;

    &lt;p&gt;Continuiamo a parlare di &lt;strong&gt;Castagnole &lt;/strong&gt;e di&lt;strong&gt;&amp;#160;ricette di Carnevale &lt;/strong&gt;e questa volta esploriamo l&#039;universo delle &lt;strong&gt;Castagnole alla ricotta.&lt;/strong&gt;&lt;/p&gt; 
&lt;p&gt;C&#039;è poco da dire, è impossibile resistere alla&lt;strong&gt; golosità&lt;/strong&gt; di una pallina dolce morbida e soffice&lt;strong&gt;.&lt;/strong&gt;&lt;/p&gt; 
&lt;p&gt;La &lt;strong&gt;ricotta&lt;/strong&gt; per le &lt;strong&gt;castagnole&lt;/strong&gt;, può essere aromatizzata al liquore, &lt;strong&gt;al cioccolato&lt;/strong&gt;, alla vaniglia, all&#039;&lt;strong&gt;Alchermes. &lt;/strong&gt;E possiamo anche cuocere le &lt;strong&gt;castagnole in forno, &lt;/strong&gt;evitando di friggere.&lt;/p&gt; 
&lt;p&gt;In qualsiasi modo le volete preparare, ricordatevi di farne tante perchè finiscono subito.&lt;/p&gt;

&lt;p&gt;La &lt;strong&gt;ricetta delle stelle filanti &lt;/strong&gt;l&#039;ho avuta in eredità da mia zia, ma ho scoperto che in origine è una &lt;strong&gt;ricetta&lt;/strong&gt; emiliana. Infatti si prepara con la stessa &lt;strong&gt;sfoglia&lt;/strong&gt; delle &lt;strong&gt;tagliatelle. &lt;/strong&gt;La zia però aveva fatto delle sue varianti e devo dire che la migliorano di molto. Il risultato è &lt;strong&gt;croccante e aromatico&lt;/strong&gt;.&lt;br /&gt;&lt;/p&gt;

&lt;p&gt;Esattamente come per la &lt;strong&gt;versione tradizionale &lt;/strong&gt;al posto delle &lt;strong&gt;mele&lt;/strong&gt; si possono usare le &lt;strong&gt;pere&lt;/strong&gt; o le &lt;strong&gt;banane&lt;/strong&gt;. Assomigliano molto ai &lt;strong&gt;bigné &lt;/strong&gt;e in effetti potremo usare la &lt;strong&gt;stessa ricetta&lt;/strong&gt; per fare i &lt;strong&gt;Bigné di San Giuseppe&lt;/strong&gt;.&lt;/p&gt; 
&lt;p&gt;La differenza sta nella grandezza. Le caratteristiche sono le stesse: una&lt;strong&gt; pasta leggera &lt;/strong&gt;che avvolge un&lt;strong&gt; ripieno&lt;/strong&gt; che scoppierà in bocca lasciando andare tutto il suo sapore. &lt;/p&gt; 
&lt;p&gt;Il ripieno può essere di &lt;strong&gt;crema chantilly, &lt;/strong&gt;di &lt;strong&gt;crema al cioccolato&lt;/strong&gt;, di&lt;strong&gt; ricotta&lt;/strong&gt;..Come per quelle&lt;strong&gt; semplici, le castagnole &lt;/strong&gt;possono essere &lt;strong&gt;fritte &lt;/strong&gt;oppure cotte al &lt;strong&gt;forno&lt;/strong&gt;. &lt;p&gt;Il &lt;strong&gt;Carnevale&lt;/strong&gt; è una festa laica antichissima che affonda le sue radici tra gli antichi riti pagani, i baccanali dei romani e che conserva intatte le sue usanze e le &lt;strong&gt;sue ricette. &lt;/strong&gt;&lt;/p&gt;
